Good Jerky

When I was a kid, we made some great jerky. I always looked forward to getting some venison ready for the smoker. I have not purchased any jerky that I remember, until a few days before the season last year. I ate a little, but did not care much for it. I placed the remainder in the freezer and decided to get a couple of bags of what I thought would be better stuff. I was totally wrong. Before the season was over I was offering mine to whomever I saw in camp, and ended up feeding some to the coyotes. The stuff really was not fit to eat.
So here is my question. Can good old fashioned jerky be bought in any store, or is it a make it yourself proposition? That thin sliced cooked garbage is IMO not even fit for the coyotes. Soak it in water and let the buzzards have it.

What is good jerky to you?


My favorite is smoked sweet and almost juicy , well more tender and moist
We had 40 lbs made out of my daughter moose, more of what I would consider dried cured, enough salt and sugar to make it taste like something.

A buddy started making summer sausage,. Maybe anouther project.

Lefty: I like the old fashioned jerky that is smoked and dried in a smoke house. It is fairly thick and turns black and is juicy and pink on the inside. It takes at least a couple of days to dry even in 60 degree weather. I dislike that thin sliced cooked stuff in a plastic bag, that has the flavor of whatever the shred of meat is soaked in and the constituency of cardboard.

I came across some similar to what we both like,.. about $5.00 for 3 oz.
The best jerk and smoked salmon I use to buy from a klickatat native fellow I use to buy it on the res.1990's elk or salmon$2.50 a pound He way under charged,..

Stewarts Meats is an old fashioned meat market close to where I live. They still make the best jerky I've ever bought across the counter. Not sure how they do it, but it is really good. They actually package some of their products (including jerky) and ship it to customers (I've done this a few times for relatives/friends). Maybe give a pound of their jerky a shot and see if that's the flavor/consistency you're after.

Thanks RJ. I think I will stop in to see those folks the next time I am up in that area to visit my cousin. He lives pretty close by.
