Homemade Protein Bar recipe

Postby SarcasmPhD » 07 03, 2015 •  [Post 1]

Here's a recipe I put together as a meal replacement and for post-workout that I plan on packing for my hunt. It's nutrient dense so when you're out there chasing bulls, it's a quick meal that'll help you keep to pushing on. Give it a try.

Chocolate Pumpkin Protein Bars
Preheat the oven @ 375 degrees

2cups oatmeal
1 cup whole almonds
In a food processor, combine the oatmeal and almonds. Blend until they are a fine powder. Usually around 2 minutes.

Combine the dry ingredients in a bowl:
Almonds/oatmeal flour, 6 scoops of Chocolate whey protein, 2 teaspoons baking powder, 1/3 cup flax seed meal, 1/4 cup dark chocolate chips, 1/4 cup cranberries (craisins )
Mix the dry ingredients together, then add the remaining ingredients:
2 egg whites
1 can pumpkin
2 tablespoons of honey
1 cup almond milk - you can use regular milk, I just choose to use almond milk

Mix all the ingredients together, pour into a baking pan, bake for 20-25 minutes

Thanks for posting. I've been looking for a recipe for protein bars. Any alternatives for the pumpkin. I'm not a fan.

You can add peanut butter, almond butter. I usually will add either of the two if I don't use pumpkin. That would measure 3/4 cup.

You could probably substitute cooked sweet potato for the pumpkin. A touch of sweetness and still very nutritious.

Great recipe ,thanks, My wife just made these and they are kind of more of cake type food, you don't really taste the pumpkin, I am not a big fan of pumpkin and I really like them.
Not sure how they will be rattling around in a pack all day. So next time she will try spreading them thin and bake slower and lower heat.

Glad you liked it. I usually put them in the fridge. That hardens them up. It's a recipe I put together myself. It's definitely got room for improvement.

Please. No offense taken. It's kind of like a base recipe. Have fun with it.

As for the calories...to be honest, I haven't a clue. Only because I never took the time to figure out the serving size to calories ratio, I guess you'd call it. Math isn't one of my strong suits.... ;)

You reminded me of when dad and I would make granola bars, best tasting granola bars I ever had in my life! Your recipe sounds great! :) I'll have to try it.
