Great Weight loss Meal

Postby SoCo Mark » 02 04, 2014 •  [Post 1]

I am continually trying to come up with healthier meals that are conducive to a healthy lifestyle. As I am getting more involved in my workouts, there is a need to properly fuel my body via healthy meals. I have one I'd like to share and am curious to see others' recipes. I'm not necessarily looking for kale and spinach shakes and the like, as I most likely won't drink those on a regular basis at all. What I'm more looking for are healthy recipes that taste like food and that one looks forward to eating or drinking. So here goes.
One of my favorites lately is spaghetti squash pasta. Spaghetti squash can be found in most grocery stores. Simply slice it in half length wise, scoop out the seeds and all of the string stuff inside. Place it flat side down and bake at 350 for 45 minutes. Take it out, let it cool and scoop out the "meat" out of the shell. When it is cooked, this "meat" will come out in strings, identical to spaghetti. If you eat it straight, it will have a squash type taste, but not too severe. I'm not a squash fan, but eating this stuff is not bad at all. However, you can cover it in your favorite marinara and you will be hard pressed to tell it apart from real spaghetti. The great part, if you're counting calories, is it is about 40 calories per cup. At that rate, 2 cups, which is too much for me, covered with marinara, maybe some ground venison, chicken, even beef, a salad or vegetable and one can stay below 400 calories for a meal that will leave you stuffed.
I've started packing a cup, with a little marinara and a little ground venison to work, heating it up to eat for a mid morning snack. Sounds crazy, but I love this stuff. I believe it is also known as winter squash.

I guess it really comes down to your lifestyle and what you fitness goals are. But to follow along with this I will post up two meals I have enjoyed while training for the mountains.
Post work out meal, roughly two hours after, is a 4 egg white omelet with a 4 oz salmon, sliced mushrooms, and jalapenos and red peppers. Wrapped in a thin whole wheat tortilla. running roughly 425 to 475 cal.
Before running outdoors long distance I like to make oatmeal. Depending on the run itself but whole oats with a heavy spoon full of chunky peanut butter heated up with a little water. After its warm, add a sliced banana and top it with little bit of honey for extra flavor.

i'm getting to the point where my wife is noticing my weight loss. (she loves it!)

i love spaghetti squash. heck i love ALL squash. spaghetti squash..face it, it wont replace pasta. i use it more like a squash and less like a pasta. it is fantastic.

oh, i take raw zucchini and make it into "noodles" with my mandoline. and i mix it 50/50 with pasta. fills me up, and it taste awesome..and cuts my pasta carbs in half.

cooking is half the fun of life...sucks getting tasty animals to stand still and nearby is so difficult..
