Elk Parts

Postby Beendare » 05 24, 2017 •  [Post 1]

Anyone eat the Rocky mtn oysters?

Or cooking the head? [I have guys working for me that do a pig head a couple times a year and they say its excellent] Probably not a good idea with elk due to CWD.

I look forward to eating the heart...sliced thin and saute with a little olive oil, garlic salt and pepper....delicious

Liver- yuck

Kidneys and all that....never tried it

We usually try to cook as much meat as we can eat in the first 1/2 day or so as it is so nice and tender [before the proteins change]

I do not eat any guts or head parts. The parts I want are made into steaks, hamburger and stew meat. Sometimes a little will be made into jerky.

I like heart and liver, but they are bad if your cholesterol is high to begin with, so I don't eat them anymore. Tried oysters at a branding years ago.I can do without them.

Just the muscle meat for me. No oysters, feet, inards, outards, etc appeal to me. That's stuff is for the predators and other elkwoods scavengers. They need to eat also ;).

My youngest boy is 11... he loves the RM oysters. I have to save the nuts off of everything.
I've never liked heart or liver, but, back in 1978...
the first year we hunted elk, my Dad cooked up a huge pan of liver off of my first bull.
I ate a lot of it and I remember it being just lovely...
We were all really starved down... and, it was MY bull, so... that probably had something to do with it.
I've never had it since...

Heart goes into grind, liver either goes to someone who wants it, or my dogs get it...i can tolerate it, but not a fan.

Never tried oysters, but plan to, never eaten tongue but will this year.

I'm mainly a meat guy, but like trying all edible and safe parts at least once to give it a chance.

I've tried most of those listed but it was only for cattle. I haven't made the effort to take them from an elk. I worked with a crew of guys that boiled a cow skull and the meat tasted just fine. Not sure I would go through the work they did but I wouldn't turn it down.
If I had enough time and it was closer to the road, I would make the effort and try the the other parts. Liver and Heart
