Like to see some ideas for wild game meals, esp. those w mouth-watering pics. I might PM you or a recipe!

Here's a start: Youngster in camp next to mine this Nov. got his 1st elk. Helped him get it into his truck, leaving the fresh gutpile. After he left I helped myself to the heart. Had a purple onion and a lb of bacon standing by in camp, Great start to a fine hunt..

Got a buck on that hunt. It was 70 degrees here @ sunset yesterday, so I fired up the grill. Venison burgers w diced onion and cheddar cheese inside 1 inch patties, and roasted sweet peppers. Ate it up before I remembered to take a pic.

Frog Legs. Ain't nothing better. Soak them in salt water over night or until they quit kicking. Roll them in flour and fry em up like chicken. Dang, my mouth is watering just thinking about it.

my brother, my friend and i agreed that if we killed a buck we would try the testicles. err..oh o. we killed two bucks.

there was LOTS of grimacing and groaning as i fumbled my way into the cleaning process. FIRST!! it is super uncomfortable knowing just how easy those things come out. YIKES!!

i cleaned off a membrane, cut them into rounds, dusted them with flour and flash fried them in a hotass WOK. they tasted (and had the same texture) as fried oysters.

been there, DONE THAT..not so sure i'm gonna work them into the rotation. but admittedly, besides the mental uncomfortableness of eating a deer ball. they were kinda good.

I to have done the deer, Elk and Bovine testicles. Honestly I grew up ranching and part of branding season was eating the Rocky Mountain Oysters, it doesn't bother me at all they're pretty good if cooked right.
Have eaten coyote, badger, mountain lion, and every other wild meat that is usual. My next thing is elk or deer tongue, I kind of try everything just to say I have.

Being a fur trapper Ive been able to share on some big feeds of all sorts of game. Raccoon possum skunk( all nasty to me). My brother when trapping in southern states had a dozen or more older women lined up to clean their catches , then pay the for the carcass
.Mt lion,coyote, beaver, prairie dog, cottontail, jack, snowshoe rabbits,fox,red and grey squirrels, muskrat a few kinds of snakes,bear, alligator. Likely every inland duck, snows, ross, tundra swan numerous sub-species of Canada geese I haven't killed a crane yet every upland game bird found in Minnesota, Central Washington, and SE Idaho.

Whitetail, mulie, blacktail, elk, moose, caribou, bear

Living in Washington a few years. King, Red, dog, pink, silver salmon We had all sorts of critters from the the salt water.
What we didnt catch/trap ourselves for a fun night with my kids we would go to Cub foods that had incredible seafood. Seems the uglier the thing the better it taste. Dungeness crab always a big winner. My kids love baby octopus fried in salt butter. some Clams, oyster mussels and squid taste different.
And Columbia river Smelt Minnesota smelt Varies whitefish species of Salmon , lost of trout. Sturgeon catfish( yuk)
fish eyeballs eggs and row,.. I remember sardines heads guts and all

My brother was a commercial turtle trapper so snappers and , softshells (leatherbacks)
My dad use to love liverwurst and bologna sandwiches so who knows picked pigs feet, about anything pickled. Lengua burritos
Im sure I missed a few

I use to buy egg rolls from a famliy that was later discovered were using act and dogs in their egg rolls

No rocky mt oysters that Im aware of. Where is a good place to catch clean crayfish in SE Idaho

the Rodent. i heard they are good.

i have two deer tongues in deep freeze. they are pretty tiny, and i think i need two more before i turn them into tacos.

Finally getting around to butchering this lion. It was so cold before that it just got a basic disassembly and thrown in the freezer. Now the final work. Peeling the fat off of this, i cant help but notice how much it looks like a nice chunk of pork. Ill be posting some on-the-table finished meals soon!

Actually looks like good meat. I've never eaten cat but have heard good things about it... Let us know how good a table fare they are.

i accidentally ate cat at a dive taco joint in Juarez MEX. that didnt end well. i got sick.

my doc ran a bunch of test and found my liver infected. i remember him mumbling something that sounded like..."weird..you usually see this infection with someone that ate undercooked cat meat..."

i was too sick to slap my own forehead...and i didnt say a thing cuz my mom was in the room. i took the pills. dumbass college kids..

looking back i wish i could have asked the doctor some questions..starting with.."what did you just say?"

i would eat that cougar..i heard it makes awesome chili. cook it well tho.

When I trapped commercially in Minnesota, My dad had all sorts of folks lined up to get out carcasses.. Minnesota beaver generally didnt have gardenia (sp?)
Most years I put up 150-200 lbs of beaver meat. My brother had a buddy that was a butcher. He would make sausage from the older beaver "hams" I just cut out loins big beaver loins I would cut into 2 or 3 pieces.
We supplied hundreds of pounds of meat for parties,.. Some of those in attendance were not your deer hunting rednecks.

Loins cut lengthwise
Fried in butter and olive oil and a bit of seasoning, cooked to med/rare or med. Puts the best field fed white-tail further down the list

do not think you can make beaver tail soup edible

wawhitey is right. It does taste a lot like fresh ham or chops. But I thought it was a lot drier. Cat is good eating!

yep, Mtn lion is pretty good eating.... like really lean pork. my next one, the first meal I make will be pulled pork...err, lion for sandwiches....has to be good, super easy in a pressure cooker too.
