Bear, so good!!!!

Russian inspired bear kotleti with warm cabbage slaw

I didnt follow the recipe perfectly.. I tenderized pieces of bear instead of using ground meat, Instead of patties I made then straight up fried the finger strips instead . A much different look but wow, Just incredible
And the cabbage slaw was incredible heated to temperature.
The pic is the left overs after a couple servings :lol:


The real recipe is a meatloaf type patties. And I didn't fry in deep bacon grease,.. but sooo-so good

INGREDIENTS
kotleti (patties)-

2 lb ground bear
1 medium onion, finely grated
2 Tbsp mayo
2 large egg
2 slices sour dough bread
1-2 garlic cloves, minced
½ tsp salt
2 tble bacon grease , I used chopped bacon cooked to a crisp
2 tsp milk
ground pepper

Coleslaw
Cabbage ,
apple cider vinegar,
salt
mustard
I used a 2/4 cup of sourcream and 1/4 cup mayo

Ill ground meat and make the patties next time,.. But oh so good

I was hoping to do a little bear hunting this spring but some way more important things have came up so I haven’t been able to go. Hopefully next year I can try this recipe out

Impossible. More important things dont exist as far as im aware.

Too easy,.. I had about a one lb bag of a few pieces of bear.. Turned the pan on Med-high with a tablespoon of avacado oil.

Cut the pieces up into walnut sized chunks.
Put in a small amount of Montrose steak seasoning.
In the hot pan the pieces went,,, s
A few pieces were seared on one side,.. Tossed in sliced onion,
Turned the hear to low.
Cooking pushed much of the juices out, of the meat.
I let the natural jucies cook down, then added a tablesoon of butter ,
I let the butter and jucies cook to almost nothing.

the onion and pan scrapings were great too.

So So good, and simple. Some may want to add salt or more seasoning. Relatively easy if you can turn on a pan, slice onion and not burn butter 8-) .
