Elk Chili

Elk Chili

Ingredients
- 2# ground elk no fat added, browned
- 1# top round elk roast, chopped and browned
- 1 large yellow onion diced
- 1 yellow and red bell pepper diced
- 1 Jalepeno pepper diced, no seeds
- 1 Anaheim pepper diced, no seeds
- 1 can yellow or white corn, drained
- 1 can petite diced tomatoes with green chilies, mostly drained
- 1 can fire roasted tomatoes, salsa style
- 1 can tomatoe sauce
- 1 can kidney beans drained/rinsed
- 1 can black beans drained/rinsed
- 2 cans chili beans medium sauce
- 3 packages Mccormick's White Chicken Chili seasoning, trust me

1. Saute onions until translucent and slightly browned
2. Saute all peppers until al dente and slightly browned
3. Combine all ingredients, cover and simmer on low 2-3 hours.

Serve with giant load of garlic bread, or eat hog bowl with entire bag of Juanitas tortilla chips.

Been on the stove since about 1:00, just approaching perfection. Of course I've had to taste test every 10-15 minutes just to be sure :lol:
