The only game I've tried multiple times and just can't get onboard with is duck. Never tried goose. I've had some excellent jerky and pepperoni though so I'd consider that. All the mammals I've eaten I've enjoyed.

wood duck is awesome, 7mm! throw it on the grill with some alpine touch and it disappears before I can get it to the table.

Sharptail grouse isnt real good.

I should have prefaced that statement with the fact that I've learned to cook wild game significantly better since the last time I ate duck. I should give it another chance.

When I was eating it semi-regularly my issue was that it varied duck to duck. I could eat a big fat mallard drake one day and it would be very good, and turn around and do the same with another one a couple days later and the dog wouldn't eat it. I didn't like the inconsistency of it, so I finally just started shopping it all up and feeding it to the dog, who at most of it, not all of it.

Well first I have to find a wood duck. They aren't in every tree here in WA.

Most of the antelope I have tasted was not good. I ate it but would have fed it to the dog if I had one. I don't care for liver either.

Swede: Antelope it is better than elk!!! Ill trade you pound for pound!

Raccoon, possum and skunk,, tried them each a number of times,, something about those foul greasy omnivores I dont care for. I have had some raccoon BBQ grilled that was fine but the real flavor had been covered up

I haven't had anything in the weasel family.( other than a skunk) and I don't plan to pursue that line.
Ive eaten groundhog but not rock chucks

I have no desire to eat any more canines. Same with most rodents ,,, unless I get on an eastern tree squirrel hunt,, Beaver is exceptional very similar flavor and texture to moose.

I have no interest in birds of prey either,,, Well I would eat a spotted owl just to say I did

Of all the grouse, sage grouse is the best. but like so many upland game birds they are dry. ( a true cream sauce helps)

Duck and goose can have a strong flavor. Skin left on a breasted duck is usually good. Canada goose can be much better.

If I want to impress someone with goose, First it cant be bloodshot. Remove the silver skin-tissue, soaked in a light brine for one day. Vacuum seal and keep refrigerated for 5 days A completely different and better flavor and texture!!!

Most waterfowlers that hunt snow geese strongly claim that snow geese are the best ( so do I)

Antelope may be good. I have never killed one. People offer me theirs. I have noticed that people that offer you some of their game are wanting to get rid of it. The reason they don't want to eat it themselves is likely because it is not fit to eat. I got Someone's antelope at the butcher shop once. It was quite good. I have had the same experience with bear meat.

Mountain Lion, bear, about any animal that eats meat or carrion.
Fish eating ducks
Of the one Rocky Mountain goat I tagged,I don't care to eat another.

My preference in big game is (in order), Big Horn Sheep, pronghorn, elk, deer.

I rarely shoot anything I won't eat. There are a lot of things I have not shot so my list is limited. I have tried turkey, bear and cougar which I have never killed. Some bear is good, but I have not wanted one bad enough to gut, skin, pack out, and process.

I think the joke about God creating opossums and armadillos with leftover spare parts could have some truth. :o
I trapped my first possum in Indiana ( intended target trophy animal for me at that time) ) It grossed me out so much I paid a skinner to put up the fur for me.
