Anyone make their own brats?

I'm looking for a brat recipe. The cost of getting a deer processed into brats is just getting out of control ($300). I'm thinking I will be able to buy a pretty decent grinder for the cost of getting a deer processed.

Jalapeno Cheddar Brats
5lbs recipe:
5 teaspoon Morton Tender Quick
1 Tablespoon Black Pepper
1 teaspoon Mustard Seed
1 teaspoon Marjoram
1 Tablespoon Brown Sugar
1 Tablespoon garlic Powder
4 Jalapeno Peppers
½ lbs High Temperature Cheddar Cheese

Big Sky Italian Brats
(14) lbs Venison (7) lbs Pork (7) lbs bacon
11.2 T Kosher Salt
5.6 T Paprika
4.2 T Crushed red pepper
11.2 T Fennel Seeds
2.8 T Ground Coriander
5.6 T Garlic Granules
5.6 T Lemon Juice
8 Cups Mozzarella
2.8 Cans (14.5 oz) Italian style stewed tomatoes, crushed (maybe some wine)
2.8 cups nonfat dry milk powder
3 cups garlic water.

Pineapple Teriyaki Brats
(14) lbs Venison (7) lbs Pork (7) lbs bacon
18.6 T Brown Sugar
11.2 Cups Diced Pineapple (ill add the juice from cans)
1.4 cups soy sauce
1.4 cups Sake
5.6 T minced garlic
5.6 T Fine grate Ginger
11.2t Kosher Salt
5.6 t white pepper
5.6 t Sesame Oil
5.6 T Chili Paste
8 Cups Mozzarella


Personally didnt like how the PT turned out. Few things I would change about it. Working on a mango habanero for next year.

Brent, did you smoke those or did you just mix them up and cook them?

I decided not to this year. For a couple reasons. Last year when I used cheese, not the high temp, it melted on me during the process. I also had very lean pork and they dried out a little bit. Thats where the bacon comes in. It also will take away from the flavor a little bit. I could smoke it for less but when we have large quantities in a one day process its difficult to regulate for each recipe when they are in the smoker. I have a few buddies that have the new traeger smokers that I plan on trying a few out that way.
