A weeks worth of prep.

Had to kill eight geese.
Grind, then cure.
Today in the oven
17.5 lbs: I wanted something a ;little more light on salt and spices. A bit less cure, added an extra cup of dehydrated onion ( absorb moisture, and instead of garlic , , 1/2 chia ( to make it healthy :lol: , and absorb moisture) , 1/3 cup of brown sugar

Next go around with fruit and others with cheese !

Sounds great. Still haven't tried my hand at making summer sausage.

Nice, I have a few hundred pounds of venison to turn into trail bologna, summer sausage and sticks, planning on doing that in the next few weeks.
