Very nice. I have a Benchmade filet knife that I love.

What is your primary use for your goose meat?

We eat it!!!

We use to eat a lot of goose When our daughters were in HS and college we were eating 120-160 geese a year.
Sliced 1/2 thick and fried as steak.

Sliced thin for stir fry

Crock pot: like roast beef au jus.
If I have a few big days this year Ill make summer sausage.

I need to make goodies for other to eat it . Gave big sticks of Summer Sausage away .

Ha! I got a very similar knife in the mail Lefty! Especially nice was the ten $100 bills taped to it!

It did a great job on our Christmas ham and turkey.

I prefer Dexter knives, they keep a good edge, easy to sharpen, good anti slip grip, and big enough to hold.

I have a bunch of the outdoor edge products. They give hunter safety instructors a great discount so I order two products a year from them ( that is the limit).

My favorite processing knives are Victorinox. They are razor sharp, hold it well, and I can make them scary sharp with my Worksharp Ken Onion sharpener. The short blade boning knife is great for exactly what it's name says, and the longer sweeping blade breaking knife is the all purpose slicer.
