This years perfected camp meal

This years perfected camp meal

I microwave the potatoes at home.
Slice and slow cook red peppers and onion at home.
At camp I warm up the taters onion and red peppers.
Add eggs.
Then cheese, some sort of hot pepper, elk garlic summer sausage and more cheese.

Looks good! My wife showed me a good one that I used in camp last week. Pour your stirred up eggs into a pan like your making an omlet.. when there's still some moisture on top of the eggs plop a tortilla on top and let it sit for a few seconds then flip the whole thing over. While the tortilla crisps up you can add cheese/meat/veggies and then flip it in half to make a handheld omelet! It was fantastic!

When I was a Scoutmaster Breakfast burritos were king.
Many of the years while I was teaching and had a shop we grilled and smoked lots of meats ( the envy of all those down wind) :P
Breckfast burritos were our mainstay
