Red meat rub/ marinade

Postby Lefty » 03 17, 2021 •  [Post 1]

I've been trying a lot of new game recipes. Many are and similar to how I already cook.
Olive oil,
minced garlic
Smoked paprika
Brown sugar ( 8 bet honey would be better)
Dry mustard
Black pepper and salt
Oh so good

That does look, and sound good. I've done a fair amount of smoked deer and elk in the last year, and what I've defaulted to is a coating of olive oil, then a liberal dose of Johnny's with some brown sugar rubbed on. Wrapped up in plastic wrap or vac sealed and left to rest in the fridge for up to a week. Man it comes out delicious. I also like mixing some chili powder or chipotle powder on, but my wife and son are less enthusiastic about that. This mule deer sirloin roast had been sitting for 3 days now, it will be ready to smoke this weekend.

I dont have morel mushroom ( or even inkycaps) So mushrooms have lost favor.
