Elk or Venison Stew

Good stuff here folks, give it a try.

RJs Elk Stew

1 1/2 lbs elk steak (1/2 inch cubes, browned barely in hot skillet in olive oil/light Alpine Touch season).
1 diced red onion.
4 cups beef broth
Tbsp balsamic vinegar.
Tbsp Winchester sauce.
1/4 cap liquid smoke (mesquite).
Some generous shakes each of pepper, ground basil, paprika, oregano, and sage.
1/2 packet of dry beef stew seasoning.
1-14.5 oz can Diced Fire Roasted Tomato’s w/garlic.
3 diced baker sized tatos w/skin on.
6 stalks celery diced.
1 cup diced mushrooms.
1 1/2 cups diced baby carrots.

Either cook all day in crock or in kettle on stove for a few hours.

A great stew
My version goes a dozen different directions
More meat, ground meats, foul

I have never used the canned roasted tomatoes or dry rub

Dang it now I’m Hungary

Interesting that I should see this today, I'm planing on making some bone broth from the whitetail I have hanging in my garage, maybe I'll try this recipe!

Tried it today. Darn good vittles.

IF you wan a little SW style,you might try this.

Green Chili Stew

2 cups water or a cup of water and cup of milk
2 cans cream potato soup
1 lb elk or venison ground meat
3 fresh roasted medium hot chilies, 6mediums, or 3 cans of mild chopped chilies
1 onion, chopped into 1/2 “ cubes
3 med potatoes chopped into ½” cubes or two cans of canned potatoes
½ tbsp parsley flakes
½ tsp garlic salt
1 bay leaf(optional)
¼ tsp oregano
1/8-1/4 tsp greek seasoning
Sautee onions and cook ground meat with the onions.
Add water ( or milk), spices, chilies
Cook potatoes separately or use canned potatoes.
When meat/onions /spices are cooked, add cream of potato soup and potatoes.
Simmer until desired consistency.

Serve with warm tortillas or cornbread and honey
