Elk Carbonnade

I made Hank Shaw’s recipe for Belgium Elk Carbonnade and it turned out great! I am a quarter Belgium, so this was an homage to my ancestors. I highly recommend this recipe to anyone with some spare elk in the freezer. I ended up using elk shoulder roast and mashed potatoes.
