Not fried, but everyone loves it when we cube pheasants and roll the meat, cream cheese, and a jalapeno slice (optional) in bacon and then broil it.

The jalapeno pheasant poppers sound great. I've done something similar with quail breasts. I just haven't done that much upland bird hunting. The ducks I killed got turned into pepperoni generally.
I hunt therefore I am. I fish therefore I lie.

We fry ducks and geese, maybe a dozen ways, all simple Sliced thin, or up to 1/2 inch thick. And keep them rare. (med rare if my wife is eating) .

hot pan, olive oil, Coconut oil and butter sometimes added to each, sometimes sesame oil or chili oil
If my wife is eating, more often the salty flavors and sweat flavors,,, boring!
If its me and the dogs,,, no salt, hot peppers or garlic, butter butter butter :D mostly buttery

Our youngest likes all the herbs. Her big thing!
Oldest likes it salty, garlic and red pepper hot.

Sometimes things are added to the pan, sometimes an over night soak

marinades:
Soy Sauce ( add brown sugar)
A1- sauce
Heinz 57
Sesame soy( my favorite of the salty soys types)

dry seasoning :
Garlic
Alpine onion salt
Johnny's garlic seasoning
Montreal steak
Tyime
Rosemary
sage
taco seasoning,
ground red pepper

Hot pan.
Olive oil a a tad bit of butter.
A little Alpine Onion flavor on my portion, the dog got her pieces plain.

Oops. The goose was gone before the peppers were done cooking
