Elk Hearts & Liver

Who eats these? I for one just cannot take the texture of them so do without! (grin) I have friends where we've kept the heart for them but that's as close as I get to it!

Heart, not a fan. Besides, it always has a hole in it ;) Liver, however, is great when fresh, I mean today fresh. Take off all connective tissue and the big blood vessels. Slice it across grain like steaks, half inch thick or a little more. Put flour and seasonings in a plastic bag big enough to hold a slice of meat, coat each slice right b4 frying. Cook lots of bacon, the fat will be the main liquid for frying the liver. I like garlic, herbs, onion, maybe even some red wine in the fat. Hot oil, fry em up with sliced onions, maybe sliced squash. If liver cooks too long it gets chewy, so go about medium. Amazing fresh flavor. Make you strong like bull!

I keep the heart and think it's excellent! I prefer to put the hole in it to drain the blood thoroughly.

I also leave behind now, as a kid it was tradition to eat them one night at camp hated it so I started my own tradition. Also prefer the gutless method and getting them out is to much work for a snack I hate

I don't mind either if prepared right. If I had to pick I would go with liver over heart. Liver n onions..mmmmmmmmm good!

I'm the opposite..I'll eat the heart, no thanks on the liver!
Take the heart, slice it up and soak it in salt water overnight. Flour and fry, enjoy!

Elk meat tacos! Liver? I can eat it but it isn't a favorite. Besides I suffer from gout, so organs are a no-no for the most part. I bring it out for a friend. It sucks because I bet it weighs 10 lbs. it is freakishly heavy and pretty huge. I get it into plastic and into ice pretty quick. My Vietnamese friends live it and cook it 10 different ways. They want the kidney as well. But I always forget. Besides I'm not positive which bit that is. Haha.

Yep. Both. Usually make liverwurst out of a good portion of the liver. It rocks.
