Hiking/camping/fishing

I'm planning a long weekend trip to Colorado from Missouri. This will be my wife's first trip. Any good places to hike in camp and do a little fishing close to Denver?

This would be my best suggestion for something "close to Denver" that would still give a way out there feeling. The altitude is not as high as some of the other places I would suggest such as the Granby area or Rocky Mountain National Park; it is also closer.
