Heart and Liver

I have eaten a lot of heart and liver and onions. Would have to eat it in camp before i go home as my wife will not fix or eat any of it.

LOL!! I too am not an organ eater!! (grin) Just never acquired a taste for them & yes I've tried both!

Agreed. Heart is okay but not what I would consider good unless raw :) and liver is horrible. You better hope you don't kill your first elk or deer on my watch. You WILL be eating a chunk of raw heart.

We always eat the heart and liver first,,its best if it is fresh,,I dont care for restaurant liver and onions, but wild liver and heart are great,just had some fresh bear liver the other night,,awesome

I eat both liver and heart. Liver on the day of the kill. My favorite meal for liver is saute onions on medium with butter. Then add 1/2" cubed fresh wild puffball mushrooms (always around during the elk hunt where I hunt). Once the mushrooms begin to loose moisture I add the liver (cubed). Add a bit of salt and pepper and it is really good. Heart takes a bit more effort as it can be tough. I cut the heart in half and devein it. Then stuff it with vegies and wrap with twine. Place in crock pot. Add 4-6 cups of elk demi glace and cook on low for about 12 hours. A very rich meal.

Conlan, them there is fight'n words! So I think maybe we had better not ever hunt together. LOL! But maybe I can skate by. Recon I've killed my fair share of each and you did say the first one.

Yuck!!!!!!! Not for me! But I must admit, it makes some pretty good catfish bait. LOL!

heart is fantastic.

liver..only good fresh. like day of. it taste nothing like the liver and onions of our youth.
i dont eat organ meat, because of health reasons. it is really where all the nutrients and minerals hide..but we dont need that level of nutrition anymore, now that we are not dodging saber tooths, and living in caves.

i run the edible inside bits to relatives that dig it..

I'm a heart guy. I really like it, every since I was a kid. But I'd never take a bite of raw heart--I know too much about parasites and bacteria for that. I've never had liver that tasted good!

I have eaten both, but like neither. Remember the coyotes need to eat too.

I love beef heart on the barbecue and got an elk heart recently from a hunter who doesn't like organ mean. Gonna grill it tomorrow but it freaks people out so I may be eating it by myself.

Eating anything raw in the woods carries some risk; I eat lots of ceviche too but I won't do river fish since they can carry parasites from bear and other animals that set up shop in the liver or brain. For elk heart, from what I can find, looks like cooking well is the best idea. For reference, here is a rundown of some common diseases and parasites in wildlife, including elk:

I have always admired people(s) who kill and clean their own meat, and use every possible part of the animal. I love heart, thinly sliced, marinated and done over wood charcoal... super lean muscle meat. But I hate tripe.

I have eaten the heart and the liver. I never really liked the liver much, give it away these days,but I still eat the heart..
