There were six of us in our family. We had mashed potatoes just about every night. Us kids got to peel the potatoes and my mother would boil up a big pot of them, drain,and mash them. If we said we were still hungry,we got another big spoon full of mashed potatoes, There were always some left and we had big cast iron griddle on the stove that the potato pancakes were fried on. So many times we had potatoes twice a day. We got a break from them when the sweet corn was rip.Then we had corn twice a day.

Yup. Mashed potatoes every night, or squash from the giant blue hubbards my dad grew. My mom shopped frugal, but was creative- quick easy meals but good. Meatloaf. Pot roast. Stew. Chowder. Hot dogs. Sunday was pizza night. We could have one snack after school thats it, then dinner. No snacking after dinner. Period. Milk was from powder. OJ from a frozen can. Mom made 8 loaves of bread a week.
I still hoard cookies. I was 27 before I willingly shared any food with anyone. I still remember the moment. It was an apple. It took all my will power to offer my GF that apple but I knew it was the right thing to do.

I used to have potato cakes as a kid but don't have them anymore. I am sure they are still good.

camping fishing and deer camp staple .
Noe the recipe my mom made but close


kartoffelpuffer recipe German potato pancakes authentic traditional

2 1/2 pounds starchy potatoes, finely grated
1 big yellow onion, very finely grated
2 or 3 large eggs
1/4 cup all-purpose flour (or more if needed)
1 teaspoon salt
fried in lard and some bacon fat
Served with grape jelly, honey , powdered sugar and berry syrup My brother often used ketchup :shock:

Do that with some mashed sweet potatoes and ill be right over
