Xmas Dinner Menu

What’s on the menu at your ranch? It’s just me and Mrs Wapiti so I’ll be smoking a prime rib roast.

My dad is hosting one side and I have no clue what they are having. Probably pretty traditional. We are hosting the wife's side of the family and her brother is bringing a smoked ham and smoked turkey. Pretty traditional!

Small gathering for us, so I'm doing a small smoked half ham. I have an elk sirloin roast rubbed and in the fridge that I'll be smoking up for friends on New Years though.

It will be just my wife and me here for Christmas day. We may go out for dinner if there is a restaurant open. I know we plan to take our daughter and her family out on the afternoon of the 24th. I think we will have some pie here together in the evening.

I have saved a football sized elk roast. Going to smoke it on the rotisserie. Baked beans w/bacon from scratch. Scalloped corn. Three layer jello/cheesecake jiggly thing, mashed potatoes, green beans, beer, bourbon, chocolate bunt cake.

The usual here. Prime rib and crab legs, baked potatoes, sweet potatoes salad, and everyone's favorite,frog eye salad. Oops! almost forgot two or three pies for dessert.

Same roast here on New Years. I really like the looks of yours though. What are the details?

Salt and pepper. Olive oil. Place in grill at high heat for 5 minutes then turn down 250*. I add wood to keep it smoking the whole time. I can tell when its medium rare by firmness. I have a rotisserie so its turning all the time.

Slightly over cooked but the wife ya know.

I believe were having our traditional meal.
My chicken stock /fat gravy.
Mashed taters /garlic.cream cheese
green bean casserole
cranberry sauce
cooked carrots
grilled sweet potatoes
peas
a couple of types of bread rolls

The meat will be slightly cured smoked ham (local meat chop does light cure, and we smoke it

A few different pies and vanilla ice cream,,, if we make it that far

My son-in-law and I are splitting the bill so it's Prime Rib, King Crab, and Lobster.

All looks REALLY good!

Prime rib roast is in Saran Wrap, prepped, in the fridge till the morn. I rub the entire roast with Winchester sauce first. Then rub on my slurry of fresh ground black pepper, red pepper, kosher salt, paprika, parsley/garlic blend, thyme, rosemary, sage, light brown sugar and Alpine Touch original blend (Montana’s special spice) mixed together via 1/4 cup Xtra virgin olive oil to make the slurry. Will take it out 45 minutes before going in smoker on Xmas day. I pre heat smoker to 250 with a handful of wood chips. Place roast beast in smoker on grate, turn down temp to 225. I put more chips in every 2 hours or so and pull the roast around 135 internal temp, cover it in foil, and finish the sides. We like our prime beast recipe just a hair less than medium, around 140ish.
