All This Talk About Elk!

Makes me hungry! Elk tacos for lunch after chainsawing and splitting a few truckloads of wood for summer parties. No need to drain any grease. I don’t add fat to my ground.

Planning on a whitetail meatloaf myself tonight. No elk in the freezer unfortunately. Like you, no fat added. Pure wild game.

:lol: Have you ever walked in, looked in all the cupboards and the fridge and freezer and said hmmm I’m starving what can I make with what’s here? Elk, 1 packet of taco seasoning, a bag of shredded cheese, and the ingredients for a tossed salad… oh and look!!! A box of taco shells! :lol:

I pretty much only eat wild game , still goose , and elk in my freezer. I did add porkgrind to my summer sausage !

The only beef I eat anymore is in an occasional hamburger I buy in town. And I add no fat to my elk hamburger. And yes, we have tacos here.

So my 13 year old son is at our Pheasants Forever banquet and buys a ticket on freezer full of meat. And wins. As we are unloading the meat to move it, someone mentions the ribeye and Tbone steaks. My son goes, "What is that?". Now everyone there knows how big of a hunter and meat eater we are, so everyone was confused that my son didnt know what they were. Well, we never have beef. All wild game. so he had never had a ribeye or Tbone. So we had them. he preferred whitetail backstrap!

My son is going on 5 this year, has never eaten beef. As far as he knows all meat comes from the woods and Daddy goes out there and shoots it and brings it home.

Another no fat added grind guy. I played with it for a while and just ended up back at the simplest form.

Last night, I cooked up a couple days worth of meat:
- Mule Deer back strap
- Elk neck roast pressure cooked and shredded for taco meat
- Mule Deer eye of round
- Couple pounds of ground taco meat

Eating good next couple days.

No adds to our elk grinds here either. Our burgers are never dry or lacking. I want to explore sausage but am going to try making them without other animal adds. We have a really good organic pork guy near us that makes great ground pork though. There can be an upside to living in a wealthy urban area, like farmers being able to make a living off a small operation.

We add beef or pork to our grind. Too many complaints about falling apart for burgers and too dry. The good thing about wild game is, there is no wrong way to do it!

When making our burgers I add in a handful of the costco bacon bits, and usually crack an egg in there as well. Binds everything together, and the extra fat from the bacon bits is oh so delicious. I used to grind bacon ends and pieces into my meat, and that was pretty good, but it wasn't great for everything.
