I ground up a bunch of elk that really was intended for jerky but its what I grabbed outa the freezer and we have plenty so ....

We made burgers one night and with the rest made the big batch of chili. I like a lot of meat in our chili. We use only elk. No beef.
Key to ours is using fresh cooked beans. Use a pressure cooker it takes 20-30 minutes and you can taste a difference.

Diced onion, garlic cloves, chili powder, smoked paprika, tomato sauce, crushed fire roasted tomatoes, salt and fresh ground pepper. Two other important ingredients are ground smoked chipotle pepper and a few chocolate chips. Don't go crazy with either, adjust to taste using them at the end. The chipotle can add heat pretty fast so beware. I will sometimes also add more cumin at the end as well getting that "chili" flavor just right.

I like that recipe. I've never tried chocolate I'm my chili but I hear about it often.

Tonight is seared yellow eye rockfish for dinner, but tomorrow is mule deer heart tacos, and then elk backstrap on Tuesday.

My chili has been in the crock pot for over an hour now. I sure hope it turns out as good as jhg's looks. It is what we will have for supper tonight. No chocolate, but four jalapeños and chili powder. I am optimistic, but jalapenos can get tricky.

Swap out the kidney beans for black , and pintos, and a touch of brown sugar and you have the best chilli ever 8-) 8-)

I prefer the pinto beans. The jalapenos were a tad more than I needed, but it was good. The nice thing about hot chili is that it will keep you from getting worms all the while it is in your digestive track. Note to self: The next time you have jalapenos; don't add that last one just because it will be left by itself in the refrigerator. I would rather have ten extra jalapenos than sugar in my chili. Just me.

I could do 10 more jalapenos and brown sugar.

I finished up the last of a leftover elk steak for lunch today with baked potato and japaleno stuffed olives.

muy bueno! (sorry, no pics... but it was darned good)

one of the ways I really like (leftover) elk steaks is to incorporate it into a big salad. diced pickled egg, cheese, pepper slices, etc.

I do the same with the salad. Had a big salad for lunch with chopped elk back strap, sweet onions, bell peppers, chopped egg, some pepper jack and a garlic vinaigrette. Man it's tasty.

Making braised elk neck carnitas for dinner tonight, and a MD blade roast on Saturday. :lol:
